Yes, I am serious. This recipe can be done without a stove, Without an oven. Just a blowtorch.
Yup. This lovely bowl of Gyu Don can be done, with just a blow torch. This is a technique I first witnessed being executed by the sushi chefs at the Tatsuya Japanese Restaurant in Goodwood Park Hotel in Singapore. I was amazed. My jaw dropped and I stared!
Gyu Don is beef on rice. You start with the best beef you are willing to buy, in this case, a wagyu sirloin.
I trimmed of the fat a bit.
No, it didn’t go to waste. I fried onions with it. I then sliced up the beef.
Try to get even, quarter inch slices.
So that it will cook evenly later. In the meantime, beat up two eggs.
And you are almost mise en place! Just prepare two warmed bowls with fresh cooked Japanese rice.
Now, for the real amazing and fun part. Remember to prepare your blow torch
First, fire it up.
And now, I am serious. Watch carefully. Apply the torch right onto the egg
A crust of cooked egg will form.
I moved out from the center in widening circles.
Controlling things so I go a nice brown crust.
That’s about it. Transfer the cooked egg layer onto the rice.
Cooked side down, and spread it.
There! Now for the beef! Lay it out onto a tray, a frying pan, anything flameproof. (Not a non-stick pan!)
Make sure its a single, even layer. And apply the torch!
Wave it side to side, moving across the beef.
For the first pass, just cook the surface.
And I then try to get an even charred layer all over.
It will flare up now and then. Don’t run. When done with one side, flip. Sprinkle on some seven spice powder…
And pour in a mixture of soya sauce, mirin and sake (i.e. teriyaki sauce!)
Then apply the flame again to the other side. It will cook, and brown, faster than the first.
Done, you can now plate!
Pour the liquid in the pan over the rice…
I added some onions fried in beef fat….
Topped off with spring onion
And we are ready!
To eat!!!
The beef will be medium rare!
