Happy National Day to folks in Singapore!

For me, food defines a nation. Here is a collection of my attempts at a few of Singapore’s National dishes!

Fried Hokkien Mee – the magic of prawn stock, eggs, yellow noodles, and heat!

Chicken Rice  – magic happens, when you fry rice in chicken fat

Fried Hor Fun – you need serious heat for this, and the right type of rice noodle

Bak Kut Teh – I just had some wonderful BBQ ribs in the US. I cant decide what I like more.

These are my “try-outs”

Chilli Crab – I don’t like chillies, but I prefer this to cold boiled crabs any day!

Roti Prata – the bread of my dreams. Good versions are getting harder to get!

Popiah – burritos – with less calories
